Simple dish. Full of rich creamy curd , cashews and great relish in summer especially when eaten cold from fridge. Here is the recipe
INGREDIENTS :
Rice :- 2 cups boiled well. Its okay if you over boil
Cashews :- 1/2 cup (broken to small pieces)
Anardana/pomegranate seeds :- 1/4 cup (optional)
Onions :- chopped very finely :- 1/2 cup
Green chillies :- 3-4(chopped)
Urad dal :- 1 tea spoon
Chana dal :- 1 tea spoon
Miriyalu/pepper corns :- optional(1/2 tea spoon)
Jeera:- tea spoon
Aavalu/mustard seeds :- 1 tea spoon
Curry leaves : 5-6 leaves
Coriander : for dressing
Curd : creamy curd (2 cups)
Oil : 1 tablespoon
Salt : as required
METHOD :
- Take a pan add oil and sizzle chana dal, urad dal, jeera ,mustard and cashew nuts. Fry them till cashews are light brown.
- Add curry leaves,green chillies and fry them for 1 more minute. Add pepper corns and fry for 1 more minute
- Add onions and allow them to cook until they are light brown.
- Now add rice ,curd and salt.
- Mix them very well and add anardana at the end.
- Have them with butter chillies and vadiyalu :)
