Stir Fried Schezwan Vegetables


I was in mood to make and eat Chinese.I am not a great fan of this cuisine..but I would surely miss it if I did'nt eat it for a long time :). So here is the recipe.It tastes best with fried rice :)
INGREDIENTS :-
Soya granules :- 1/2cup 

Carrot :- 1/2cup (Sliced thin and long)
Green Capsicum :- 1/2 cup(sliced thin long)
Aloo :- 1/2 cup (long thin)
Baby corn/Corn Kernels :-1/2cup
Red capsicum/Yellow capsicum :-1/2 cup(sliced thin long)
Onions :- 1/2 cup (Sliced thin long)
Maida/Corn Flour :- 3 spoons
Vinegar :- 2 spoons
Dark Soy Sauce :- 3 spoons
Red Chillies :- 3-4 (grounded roughly)
Garlic flakes :- 15 (chopped finely)
Pepper Corns:- ground finely (a spoon)
Tomato Sauce :- 3 spoons
Salt :- as required
Oil :- a tablespoon
Spring onions/coriander :-chopped(to garnish)
METHOD :-
  1. Add oil to a  deep frying pan and add all the vegetables one by one and add salt.
  2. Stir fry them till they are bit soft.
  3. Add 1/2 of the chopped garlic flakes and pepper corn powder and cover with lid for 2-3 minutes till fine aroma comes.
  4. Add 3 cups of water to the vegetables and allow to boil.
  5. Add soya sauce ,vinegar, tomato sauce , red chillies and adjust salt if necessary.
  6. Mix maida/corn flour in a cup o water and add it to the pan.
  7. Allow it to simmer for few minutes till the mixture thickens .Now take a tea spoon of oil and roast remaining garlic flakes in it. Add this directly to the mixture.
  8. Adjust salt if necessary and serve it hot with noodles,fried rice or roti :)
