Bharwan Tamatar

We celebrated our 2nd marriage anniversary recently . It was two day celebration :) . One a calm , romantic candle light dinner in a nice restaurant and other was nice candle light dinner at home with delicacies made by me . It included Mushoom in chilli garlic sauce , Bharwan tamatar ki Sabzi , Garlic roti and nice salad. So here goes my recipes
INGREDIENTS :-
Hybrid tomatoes :- 5
Paneer (finely grated) :- a cup
Onions (finely chopped) :- a cup
Desi tomatoes (finely chopped):- a cup
Ginger (finely grated) :- a teaspoon
Garlic (finely chopped):- a teaspoon
Garam Masala ;- a teaspoon
Tamarind pulp :- ½ cup
Red chilly powder :- a teaspoon
Peanuts :- ½ cup
Cashwe nuts :- ½ cup
Salt :- as required
Turmeric :- a pinch
Olive oil/ butter :- 1 tablespoon
Coriander :- ½ cup
METHOD :-
  1. Dry roast peanuts and cashew nuts and grind them to fine paste adding some water.
  2. Cut Hybrid tomatoes upper part and scoop out pulp . They appear as cups now.
  3. Take a pan add ½ tablespoon olive oil and add ginger, garlic, chopped onion, salt and allow them to cook
  4. Add Finely grated paneer and fry them a bit.
  5. Add finely chopped tomatoes and cook until tomatoes are done
  6. Add turmeric, Red chilly power, garam masala and close the lid for 2 min .
  7. Cook in such a way that tomatoes and dry after cooking . It should not be wet curry.
  8. Now take the hydrid tomato cups fill them with tomato-paneer curry we just made.
  9. Now take remaining oil in a pan and carefully place stuffed tomatoes in it.
  10. Allow them to cook until tomatoes are partially charred. Take care so that tomatoes do not break.
  11. Add cashew, ground nut powder , tamarind pulp and add water to get gravy consistency.
  12. Adjust salt, red chilly powder and garam masala if necessary.
  13. Sprinkle coriander and its ready to eat .
