mixed vegetables in peanut sauce

I was in mood of trying something new… I had a vague plan and I implemented it. Somehow it came out really awesome !!!
INGREDIENTS:-
Carrots: - 1 cup (cut them length wise so that pieces are long)
Beans: - 1 cup (cut them into long pieces)
Aloo: - 1 cup (cut them into long pieces)
Onions: - 1 cup (slit lengthwise
Tomatoes: - 1 cup (slit lengthwise)
Capsicum: - 1 cup ( slit lengthwise)
Olives: - ½ cup
Chilies: - ¼ cup( Can be avoided if you need less spicy)
(You can add cauliflower mushrooms matar corn etc etc too)
Peanuts: - 1 ½ cup
Garlic pods: - 6-7 (peel them and slice them into tiny pieces)
Olive oil or butter: - 1 tablespoon
Tomato sauce or tomato puree :- 2 table spoons
Salt: - as required
Honey: - ½ tablespoon
Chill powder: - 1 spoon
china salt(ajinamoto) :- a pinch ( optional)

METHOD:-
  1. Boil all the veggies together except tomatoes, olives and onions. Do not over boil them. I boiled them using electric cooker.
  2. In a pan add a little olive oil/butter and roast peanuts (make sure they don’t burn. Or else the whole taste gets spoiled)
  3. Grind the peanuts into fine powder
  4. In the pan add olive oil/butter
  5. Add garlic pods and allow them to fry and then add onions and chilies and cook it until onions are golden brown.
  6. Now add tomatoes, salt to it and cook till tomatoes are done
  7. Now add the peanut powder, tomato puree  ,chilli powder ,honey and allow to cook for 3-4 minutes till it attains sauce like consistency.
  8. Add all the boiled veggies and mix it well Adjust salt and chill powder if required. Allow it to simmer for 5 minutes.
  9. Add olives at the end or decorate it with olives.
