Palli vankayalu....

I aw this in eenadu paper, tried it and found it very good to eat :D

INGREDIENTS :-
Vanakaya( brinjals)- 6-7 (small ones...the ones which we use for gutti vankaya or bagara baingan)
Kothimeera( Coriander Leaves/Cilantro) :- a bunch
Peanuts :- 1 cup
Oil :- a cup
Salt:- according to taste
Chilli powder :- ideally 1 teaspoon (can be adjusted according to taste )
Lemon ;- 1 large
Onions :- 3-4 big ( chopped finely into very small pieces)
Chillies :- 2-3 slit lengthwise (optional)

METHOD:-

  1. Cut the brinjals into two halves lenghtwise along with the stem and place them in salt water to prevent change of color.
  2. Now in pan add oil and deep fry peanuts. Alternatively microwave them for 2 minutes. (I microwaved :D )
  3. In the same pan add chillies onions until they turn light brown. Add salt and chilli powder and squeeze lemon and mix well.
  4. Remove them from the stove and allow them to cool.
  5. Add some more oil and place them halves of brinjals and cook until they are deep fried on both sides. Alternatively you can microwave them for 3 minutes on each side if you don't like using much oil for deep frying.
  6. Now take the onion mixture and arrange them on the white side of brinjals and arrange brinjals in circular manner on a plate.
  7. Sprinkle corainder at the end.
