Vankaya Masala Curry


There is a telugu move "Egire pavurama"  if I remember. It has this song on brinjals and ts greatness. In short the "wow" feeling of "Gutti vanakaya curry " .You can see it here . This is most sought vegetable when we call someone home for lunch/dinner :-) . It itself is a specialty . This actually requires lot of oil. But i tried minimizing the oil and was finally successful in making it using 1/2 tablespoon. The trick was I used microwave to roast /partially cook half cut brinjals  and I used pressure pan to fully cook curry . The taste was fantastic . Here is the recipe.
INGREDIENTS :-
Brinjals :- 1/4 kilo or 10 small  cut into halfs
Ginger-Garlic paste :- 1 teaspoon
Coriander seeds ;- 1 teaspoon
Peanuts :- 3- 4 teaspoons
Til/Sesame seeds :- 2 tablespoons
Gasagasalu/khus khus ;-  3 tablespoons
Finely grounded coconut :- 3 tablespoons
Chilli powder ;- 2 teaspoons (Adjust)
Salt :- as required
Oil: - 1 tablespoon.  (I used 1/2)
Jeera :- 1 teaspoon
Tamarind :- lemon sized ball
Curry leaves :- 3-4
METHOD :-
  1. Take a pan (not pressure pan) add corainder seeds dry roast them for a minute and and keep aside
  2. Add jeera dry roast for a minute and keep aside
  3. Add peanuts dry roast for a minute and keep aside
  4. Add Sesame seeds ad dry roast and keep side
  5. Add Khus khus dry roast for a minute and keep aside.
  6. Grind together all of the above into fine powder.
  7. Take a little oil an roast half cut brinjals alternatively you can apply oil of surface of brinjals and microwave them at 80% for 7 minutes.
  8. Now take a pressure pan add remaining oil, add ginger garlic paste and curry leaves and fry until aroma comes out. 
  9. Add powdered ingredients and tamarind pulp and water if necessary. Add chilli powder and ground coconut. 
  10. Add half cooked brinjals and adjust salt if necessary.
  11. Close the lid and pressure cook for 1-2 whistles. 
  12. And its done !!
