My Dear Hubby went gaga over this recipe .It was originally adapted from "The Hindu" Its here. I made my own modifications. Trust me it was awesome!!! For someone who really wants to eat easy -cheesy stuff at home, this is the best choice. This pic was taken after mixing the dish.
INGREDIENTS :
Potatoes :- sliced with skin (1 large)
Capsicum :- sliced (colorful capsicums will make it the best !! )
Carrots :- sliced
Onions :- sliced
Brinjals :- 2(Sliced)
Tomatoes :- sliced (2 large)
You can add any vegetable as per you wish. These are the ones I added.
Tomato Sauce :- 2 teaspoons
Salt :- as required
Olives :- for toppings
Tabasco sauce :- 2 teaspoons
Milk :- a cup
Mozzarella cheese :- enough to sprinkle over the baking dish
METHOD :
- Parboil potatoes in water for 5 minutes. Keep aside
- Slightly fry brinjal slices till they are light brown
- In a baking container (borosil container add a bit of olive oil/butter ).
- Add parboiled-diced potatoes.
- Add fried brinjals in the next layer.
- Add carrots , capsicums one over the other as layers.
- Add tomato sauce, Tabasco, salt over the vegetables.
- Add milk . Add olives.
- Add tomatoes as the upper most layer and sprinkle the cheese.
- Bake it in oven for 20-25 min till all the milk evaporates and the cheese becomes slightly brownish.
- Mix well before eating.
