I find tofu great replacement for paneer, very much suitable for salads.
INGREDIENTS:
Tofu: - 2 cups (chopped into small pieces and squeezed to remove extra water)
Tomatoes: - 3 medium sized one (while chopping make sure juice doesn’t spill)
Onions: - 1 large (cut into medium sized pieces)
Carrots: - 1 ½ cup
Matar: - 1 cup (you can use frozen ones)
(You can use spring onions, beet root too)
Crushed garlic pods: - 3-4(even this is optional)
Olive Oil: - ½ tablespoon
Butter: - 1 teaspoon
Chilly sauce: - 1 ½ teaspoon
Tomato sauce: - 1 ½ teaspoon (adjust quantity of sauces according to taste. We eat less sweet…so I used chilly sauce more)
Chilly flakes: - ½ teaspoon
Tomato puree: - 1 Teaspoon (can be avoided)
Vinegar: - 1 teaspoon
Salt: - as required
METHOD:-
- Wash well tofu and squeeze out extra water.
- Heat butter in a pan and fry tofu pieces till they are golden brown.
- In a bowl take all the chopped veggies add fried tofu (Here I blanched carrot and matar a bit as hubby doesn’t eat raw carrots)
- Add chilly sauce, tomato sauce, tomato puree, vinegar and mix well all the ingredients
- Heat olive oil in the pan and fry garlic pods and chilly flakes.
- Add them to the bowl. Mix well with ladle.
- Let it stay for 30 min. It really tastes good!!
