crispy bangala dumpa vepudu (aalo fry)


I always wondered how hotels and Andhra mess made potato fry soo crispy. Even hubby loves it crispy including me. So asked my sweet MIL and she gave me this tip. Soak potatoes in salt for 30 minutes to 1 hour
INGREDIENTS:-
Potatoes: - Medium Sized (4-5)
Any refined oil: - 1 tablespoon
Salt: - as required
Onions (optional):- 3 large
Red chilly powder: - according to spice (I used 1 ½ tea spoons)
METHOD:-
1. Cut the potatoes into tiny pieces.
2. Add salt to chopped potatoes mix well and allow them stay for 30 min - 1hr
3. Chop the onions if adding them
4. In a pan allow oil to heat and add onions when heated....fry them until theyare about to turn golden brown
5. Now squeeze water out of potato pieces and add them into oil
6. Cook them in closed lid until they turn crispy
7. Add chilly powder and simmer for 5 more minutes
8. Have it hot with rice
USING MICROWAVE
  1. Follow same steps as 1,2,3. 
  2. Then take potatoes into a borosil container add about a bit more than 1/2 tablespoon oil and mix well. 
  3. Microwave it for 8 minutes at 80% stirring in the middle  .
  4. Add red chilly powder and microwave for 2 more minutes.
  5. (Note:  the time for microwave-ing depends on type of microwave too. Please take that into consideration)
  6. In the above pic I used microwave to fry them.
