Bruschetta

This Italian starter, I saw it in timesofindia food column. Tried it on nice Sunday evening and it came out awesome. What a relish on Sunday evening!!
INGREDIENTS:-
Tomatoes: - Medium Sized (4-5 ripen)
Olive oil/Butter: - 1 tablespoon
Garlic pods: - 4-5 pods sliced into tiny pieces
Basil leaves: - a bunch (chopped finely)
Cilantro/kothimeera:-a bunch (chopped finely)
Mushrooms: - 1 cup (optional)
Paneer: - 1 cup (optional)
Vinegar: - 1 teaspoon
Wheat bread (don’t opt for milk bread):- 10 slices
METHOD:-
  1. Cut the tomatoes into tiny pieces.
  2. If using any of paneer or mushroom fry them separately
  3. Now in pan take butter add garlic pods, basil leaves and fry them until garlic pods turn brown. Add chopped tomatoes and salt and cook until tomatoes are done.
  4. Alternatively you can microwave tomatoes and cilantro until juice comes out of tomatoes.
  5. Add vinegar and simmer for 3-4 minutes
  6. Decorate it with cilantro and keep it aside
  7. Now take the bread…apply butter on both sides and toast them on a pan or grill it in microwave until they turn light brownish.
  8. Apply tomato stuffing on bread.
This makes wonderful starter/breakfast/snack item 
 Variation :- You can add mozzarella cheese on toast or sprinkle cheese after adding tomato stuff
